The iPod Touch is not recognized by your Mac computer as a camera device, which means that photos will not be synchronized to your computer.
If you have ssh access to your iPod, you can copy the photos manually from the following directory:
~ is /var/root for firmware versions 1.0.2 to 1.1.2, and /var/mobile for 1.1.3.
Curiously enough, the iPod Touch is correctly recognized by Windows. This is enough of a reason for us to look for a workaround, although we haven't found it yet :(
